Fruit Cocktail Cake

A very moist cake. If you like coconut and nuts then this yummy cake is for you!
  • 2 cups flour
  • 2 cups sugar
  • 2 tsp soda
  • 1/4 tsp salt
  • 2 eggs
  • 1 can #303 fruit cocktail (I am not sure if they still have this number system)
  • 1 tsp vanilla
  1. Sift dry ingredients together. Add eggs, fruit cocktail and liquid. Beat till fruit is mashed. Bake in greased and floured rectangle cake pan at 350 for 45 minutes. Ice while hot.
  2. Topping
  3. small can evaporated milk
  4. cup sugar
  5. cup coconut
  6. stick butter (melted)
  7. cup nuts
  8. Combine these ingredients and spread over cake. Broil in oven for about 5 minutes until bubbly an slightly golden.
